Classic Chicken Parmesan


    




This quintessential Italian dish is a deliciously versatile. It's a favourite for kids, but is also quite at home as part of an elegant meal-for-two.

How to use it? Try a chicken parm sandwich! Chicken Parmesan with a fresh Caesar salad! Chicken Parmesan with pasta or really any side your desire. Fresh salad and steamed veggies are always a favorite in my home.

Ingredients:
4 chicken breast butterflied open or pounded flat
1 cup of bread crumbs
2 eggs cracked & beaten
¼ cup flour
1 teaspoon of salt & 1 teaspoon of pepper
1 tablespoon of dried oregano
1 tablespoon of fresh or dried parsley (optional)
1 cup of grated mozzarella
¼ cup of grated Parmesan
1 cup of tomato sauce (your favorite or try my homemade sauce)

Method:
First, we need to get the oven preheated to 375 degrees. 

Next, you’re going to need set up a breading station. The set up is: FLOUR, EGG, BREAD CRUMB in three bowls, in this order. It has to be done in this order; it cannot be done any other order.

Now that your breading station is made, you need to season your flour with salt and pepper. In the bread crumbs, add your herbs (oregano & parsley) and half of the amount of Parmesan; the other half will be needed later.

Take each piece of chicken, coat it with flour, removing as much as you can. Then dip inside of the egg removing as much egg as possible, and now cover the chicken breast with the seasoned bread crumbs. Set them aside on a baking sheet.

You can now do one of two things. You can pan fry them quickly with three tablespoons of oil for about 30 seconds on each side over medium high heat to crisp them up quickly, or you can put them directly in oven for about 10 minutes.

If you pan fry them, put them back on baking sheet put a few tablespoons of tomato sauce on top of each, cover it with mozzarella and the rest of Parmesan cheese, then bake them for about 15 minutes or until cooked to 165 degrees.

If you chose to put them right in the oven, cook them dry for about 8 minutes. Take them out, cover each one with a few tablespoons of tomato sauce, mozzarella cheese and the rest of the Parmesan, then bake them for about another 10 minutes or until they are cooked until 165 degrees. Enjoy!
