Spring Berry Salad


    




After walking members through Steak and Eggs, I wanted to change gears and offer some lighter fare to ORC members. This is a beautiful dish with all the elements of a perfect salad - it's sweet, savory, colourful and crunchy. Enjoy!

Dressing Ingredients:

1 garlic clove minced
1 teaspoon minced ginger
2 teaspoon honey
1 teaspoon Dijon mustard (can be yellow mustard)
2 oranges juiced
2 tablespoon white wine vinegar
1/3 cup olive oil
Pinch salt & pepper

Method:
In a mason jar, combine all ingredients, fasten the lid and shake. Before serving this salad, shake the dressing one or two more times.

Salad Ingredients:

½ cup of washed blackberries
½ cup of washed raspberries
6 washed & sliced strawberries
4oz of crumbled goat cheese (this is my choice for this salad, but you could use your favorite cheese as a substitute)
2oz of pecans
4 cups of spring salad mix

Method:
Place the salad greens into a large serving bowl then evenly distribute blackberries, raspberries, strawberries, cheese and pecans on top. Remember to shake up the dressing in the mason jar before serving.
