Salmon & Shrimp Spaghetti with Pesto Cream Sauce


    




This is an amazing dish I would recommend to anyone. Making the pesto yourself takes time and pretty much requires a food processor, but is worth the extra effort. Don't have the time or equipment? Store-bought pesto will work fine and still create an amazing dinner. Let's get started!
Pesto Ingredients:
Half bunch of basil washed
5 cloves of garlic
¼ cup grated Parmesan cheese
5 tablespoons olive oil
Pinch of salt & pepper

Method:
In a food processor, place basil and garlic inside. Turn on and add olive oil as the processor runs.

Now add Parmesan cheese, salt & pepper. Mix until a paste is formed. Once formed, it is done and can be placed aside.

Pasta Ingredients:
¾ of a pound of raw spaghetti
12 to 16 shrimp (21-25 size. Approx 3 to 4 pieces per person)
12 oz of salmon diced into 1 inch cubes
1.5 cup of heavy cream/milk
3 tablespoon of flour
3 tablespoon of butter or oil
¼ of 1 white onion diced or sliced. Your preference
4 cloves of minced garlic
Juice of ½ lemon or 1 tablespoon of lemon juice
¼ cup of white wine
2 tablespoons of pesto

Method:
This dish serves about four people. First you’re going to need a pot of boiling salted water to cook your pasta. Once the water is boiling, the spaghetti will take approximately 8 minutes to cook. When cooked, strain the noodles and set off to the size.

Now, in either a large pot or large skillet, sauté your onions in butter. Once onions, are slightly translucent, add garlic. Saute for a few moments and add flour. Mix quickly then deglaze pan with white wine.

Now add milk/cream & bring to a boiling. Once the milk/cream starts to bubble, add salmon & shrimp & let simmer for approximately 4 minutes.

Once the shrimp & salmon have cooked for a few minutes, add the spaghetti, pesto sauce and lemon juice. Mix everything together and it should be ready to serve.

You can add a teaspoon of salt if you wish, but adding the lemon should help balance the flavors without having to add sodium.
