Pan Seared Salmon with Corn & Pineapple Salsa


    




A delicious dish great for a family dinner or intimate evening, I like to prepare this one with cauliflower rice and pair it with a favourite bottle of wine. Let's get started!

What you will need:
Two Pieces of Salmon
Salt & Pepper
Oil or Butter
¼ cup of Diced Pineapple
An Ear of Corn
½ Red Pepper Diced
Two Tablespoon of Red Onion
A Lime
½ Head of Cauliflower

Equipment Needed:
A Pan (Nonstick Preferred)
Knife and Cutting Board
A Big Bowl
Box grater

First we're going to get started with the salsa. This one will take the most time and is better once all the flavors get to sit together for a few moments as everything else is getting done.


Pineapple & Corn Salsa

Ingredients:
¼ Cup of Diced Pineapple
An Ear of Corn
½ Red Pepper, Diced
¼ Red Onion, Diced
A Lime

Optional Ingredients:
A Teaspoon of Honey
Dash of your Favorite Hot Sauce (Sriracha Anyone?)

Method:
Remove the husk from the corn (the green from the outside) and place it, unseasoned, in a pan on high heat. You want to slightly char the corn, turning every 30 seconds until all sides are slightly brown. Remove the corn and let cool.

While the corn is cooling, dice your pineapple, red pepper and onion. Once all diced, place into a bowl together.

With a knife, carefully slice along the corn to remove the kernels. Once they're all removed, add them to your bowl.

Juice the lime into the bowl with all ingredients. Feel free to add optional the ingredients if you like. Mix and taste; add salt & pepper.


Cauliflower Rice

Ingredients:
½ a Head of Cauliflower

Method:
Use a box grater on the cauliflower.

To cook the cauliflower, just pour a few tablespoons of hot water on top and mix. In about one or two minutes it will be ready to serve.

You can alternatively place the grated cauliflower in a bowl and microwave for two minutes on high.


Salmon

Ingredients:
Salmon 
Oil or Butter
Salt and Pepper

Method:
First, preheat your oven to 375 degrees Fahrenheit.

Once the oven is ready, heat your pan on medium-high heat. Put about a tablespoon of oil in the pan. Season your fish with salt and pepper, then place the salmon flesh side down in the hot pan. Remember to lay the salmon away from your body - this will keep any oil from splashing on you. Once the fish is in the pan, shake the handle; the fish should slide nice and easy.

Once the fish is in the pan, place the pan in the oven.

The fish will take about 7 to 9 minutes to cook.

Once the fish is done, you can compose your plates. Everything is ready to serve. Enjoy!
